minus-square@[email protected]linkfedilink2•1 year agoif you start it out in a cold pan and gradually work the heat up, you’ll be able to render a lot of the fat out while also getting a nice crisp on the outside. You can then conserve the fat for cooking with later, it makes for a great roux.
